Lightly pulse a can of chickpeas (14 oz) in a blender (still chunky) and set aside.
Next combine the following in a bowl:
1 cup flour (white or whole grain)
1/2 tsp baking powder
Slowly add next 2 ingredients to the above until smooth:
3/4 cup milk
1 egg slightly whisked
Next add:
1 small red onion finely chopped
1 small handfull chopped parsley
1 small handful chopped cilantro
2 tsp cumin & pinch of sea salt
In a skillet heat 1 tablespoon olive oil.
Add to 2 tablespoons of the batter to the pan and fry on both sides.
Topping:
2 tsp cumin
1 cup greek yogurt
1 tbsp maple syrup
1/2 tsp red peper flakes
pinch of sea salt
Top fitters with some yogurt mix and sprinkle with cilantro
